- 1 lb Salmon fillet (Cut into strips)
- 4 tablespoons Unsalted butter
- 2 tablespoons Soy sauce
- 2 tablespoons Maple syrup
- 1 teaspoon Garlic powder
- to taste Salt
- to taste Pepper
- 1 cup Long-grain white rice
- 2 cups Vegetable broth
- 1 cup Fresh spinach, chopped
- 1 Small onion, finely chopped
- 2 tablespoons Olive oil
- 1 teaspoon Lemon juice
- In a bowl, mix together the soy sauce, maple syrup, garlic powder, salt, and pepper.
- Add the salmon strips to the bowl and marinate for 15-20 minutes.
- In a large skillet, melt the butter over medium heat.
- Once the butter is melted and bubbling, add the marinated salmon strips to the skillet.
- Cook the salmon for 3-4 minutes on each side or until it is cooked through and has a nice caramelized finish.
- Remove from heat and set aside.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Stir in the rice and cook for another 2-3 minutes, allowing the rice to toast slightly.
- Pour in the vegetable broth and bring to a boil. Season with salt and pepper.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, then stir in the chopped spinach and lemon juice. Cook for an additional 2-3 minutes until the spinach is wilted.
- On a plate, serve a generous portion of spinach rice pilaf and top with the buttered salmon strips.
