Ingredients

  • 3 tablespoons hoisin sauce
  • 1/2 teaspoon chili garlic sauce
  • 3 tablespoons chicken broth or water
  • 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • Salt and pepper to taste
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoon vegetable oil
  • 1 small onion, cut into 1-inch pieces
  • 4 garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 6 green onions, diced
  • 3/4 cup unsalted roasted cashews
  • Cooked white rice for serving

Instructions

  1. Whisk together hoisin sauce, chili garlic sauce, and chicken broth in a small bowl. Set aside.
  2. Season chicken pieces with salt and pepper. Sprinkle cornstarch over the chicken and toss to coat evenly.
  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken and sauté for 8–10 minutes until golden brown and fully cooked.
  4. Add onion and cook for 3–5 minutes until soft. Stir in garlic and cook for 1 minute until fragrant.
  5. Add rice vinegar and stir. Reduce heat to medium-low, pour in the sauce mixture, and simmer for a few minutes until thickened.
  6. Remove from heat and stir in roasted cashews and green onions. Serve hot over cooked white rice.
