Instructions
Chop the broccoli into small florets, dice the onion, and mince the garlic.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
Add the broccoli florets to the pot and stir for 2-3 minutes, allowing them to soften slightly.
Pour in the vegetable or chicken broth, ensuring the broccoli is fully submerged. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the broccoli is tender.
Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.
Stir in the heavy cream, salt, black pepper, and paprika (if using). Gradually add the shredded cheddar cheese, stirring until melted and well combined.
Taste the soup and adjust the seasoning as necessary, adding more salt or pepper to your preference.
Ladle the soup into bowls and serve immediately, with crusty bread on the side if desired.
