  • 1 cup uncooked long-grain rice
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant.
  3. Add the ground beef, cooking until browned and cooked through. Drain any excess fat.
  4. Stir in the uncooked rice, cream of mushroom soup, diced tomatoes (with juice), beef broth, frozen vegetables, salt, pepper, and Italian seasoning. Mix well to combine all ingredients.
  5. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. After 25 minutes, remove the foil and sprinkle shredded cheddar cheese over the top of the casserole.
  8. Return to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  9. Once done, take the casserole out of the oven and let it cool for a few minutes before serving.

Notes

  • For a spicier version, add diced jalapeños or a dash of hot sauce.
