This Cheesy Potato Casserole is a simple, creamy, and indulgent dish perfect for any occasion. It features tender potatoes enveloped in a rich cheese sauce, making it a comforting favorite for family gatherings or as a satisfying side dish.

  • 4 cups diced potatoes (about 4 medium potatoes)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup crushed cornflakes (optional for topping)
  • 2 tablespoons butter (optional for greasing)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash, peel (if desired), and dice potatoes into uniform cubes.
  3. Boil diced potatoes in water for 10-15 minutes until just tender. Drain and cool slightly.
  4. In a large bowl, combine sour cream, cream of mushroom soup, milk, chopped onion, garlic powder, salt, and pepper. Mix well.
  5. Gently fold the boiled potatoes into the creamy mixture.
  6. Stir in 1 ½ cups of shredded cheddar cheese.
  7. Grease a 9×13-inch baking dish with butter. Pour the potato mixture into the dish.
  8. Sprinkle the remaining ½ cup of cheddar cheese and crushed cornflakes (if using) on top.
