12 lasagna noodles
1 pound large shrimp, peeled and deveined
2 cups fresh spinach, chopped
1 ½ cups ricotta cheese
1 cup mozzarella cheese, shredded
½ cup Parmesan cheese, grated
1 egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper, to taste
2 cups marinara sauce
Olive oil, for sautéing
Instructions
Preheat your oven to 375°F (190°C).
Boil the lasagna noodles according to package instructions until al dente. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant. Add shrimp, season with salt, pepper, and Italian seasoning, and cook until pink and opaque, about 3-4 minutes. Remove from heat.
In a bowl, combine ricotta cheese, chopped spinach, half of the mozzarella, half of the Parmesan, and the egg. Mix well and season with salt and pepper.
Spread a thin layer of marinara sauce on the bottom of a baking dish. Take a cooked lasagna noodle, spoon a portion of the cheese and spinach mixture along one end, add a few pieces of shrimp, and roll it up tightly. Place seam side down in the baking dish. Repeat with remaining noodles.
Once all rollatini are in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella and Parmesan cheese.
Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
Remove from the oven and allow to cool for 10-15 minutes before serving.
