1 cup brewed espresso (cooled)
½ cup amaretto liqueur
24 ladyfingers
2 cups mascarpone cheese
1 cup heavy cream
½ cup granulated sugar
1 teaspoon vanilla extract
1 cup fresh cherries (pitted and halved)
Cocoa powder (for dusting)
Dark chocolate shavings (for garnish, optional)
Instructions
In a shallow dish, combine the brewed espresso and amaretto. Set aside to cool completely.
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add granulated sugar and continue whipping until stiff peaks form.
In another bowl, combine mascarpone cheese and vanilla extract. Gently fold the whipped cream into the mascarpone mixture until smooth and well blended.
Quickly dip each ladyfinger into the espresso mixture, ensuring they are soaked but not soggy. Arrange a layer of soaked ladyfingers in the bottom of your serving dish.
Evenly distribute half of the halved cherries over the first layer of ladyfingers.
Spread half of the mascarpone mixture over the ladyfingers and cherries, smoothing it into an even layer.
Add another layer of soaked ladyfingers, followed by the remaining cherries, and top with the rest of the mascarpone mixture.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings, if desired.
Notes
For best flavor, chill overnight.
Adjust sweetness by varying the sugar in the mascarpone mixture.
