2 cups cooked chicken, shredded or diced
1 ripe avocado, mashed
1 cup cherry tomatoes, halved
½ cup cucumber, diced
½ cup bell pepper, diced
¼ cup red onion, finely chopped
2 tablespoons fresh cilantro, chopped (optional)
1 tablespoon lime juice
Salt and pepper to taste
4 large lettuce leaves (e.g., romaine or butter lettuce)
Optional: tortilla wraps or rice paper for rolling
Instructions
If you don’t have pre-cooked chicken, cook chicken breasts in a skillet over medium heat until fully cooked. Let them cool, then shred or dice.
In a mixing bowl, combine the shredded chicken, mashed avocado, cherry tomatoes, cucumber, bell pepper, red onion, cilantro (if using), lime juice, salt, and pepper. Stir until well combined.
Carefully wash and dry the lettuce leaves, ensuring they are whole and intact for rolling.
Take a lettuce leaf and place a generous scoop of the chicken salad mixture at one end. Roll the leaf tightly, tucking in the sides as you go.
If desired, use a toothpick to secure the roll up in place. Repeat the process with the remaining lettuce leaves and salad mixture.
For added flavor and texture, you can also use tortilla wraps or rice paper. Simply place the salad mixture on the wrap and roll it up tightly.
Cut the roll ups in half for easier handling and presentation. Arrange them on a serving platter.
