2 cups cooked chicken, shredded
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 cup cooked rice (white or brown)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 packet taco seasoning
1 cup salsa
8 flour tortillas, cut into strips
Optional toppings: sour cream, avocado, cilantro, and lime wedges
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, and salsa. Mix well until everything is evenly coated.
In a greased 9×13-inch baking dish, spread half of the tortilla strips on the bottom.
Pour half of the chicken mixture over the tortilla strips, spreading it evenly.
Sprinkle half of the cheddar and Monterey Jack cheese on top of the chicken mixture.
Add another layer of tortilla strips, followed by the remaining chicken mixture, and finish with the rest of the cheese.
Cover the dish with foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Once done, remove the casserole from the oven and let it cool for about 5 minutes before serving.
Top with optional garnishes like sour cream, avocado, cilantro, and lime wedges if desired.
