1 pre-made pizza crust (store-bought or homemade)
1 pound boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs (Italian style preferred)
1 cup marinara sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
Olive oil for frying
Instructions
Preheat your oven to 475°F (245°C).
Slice the chicken breasts into thin cutlets. Season with salt, pepper, and Italian seasoning.
In three separate bowls, place flour, beaten eggs, and breadcrumbs.
Dip each piece of chicken into the flour, then the egg, and finally coat with breadcrumbs. Set aside.
Heat olive oil in a large skillet over medium-high heat. Fry the chicken cutlets until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.
On a pizza stone or baking sheet, roll out or place the pre-made pizza crust. Spread marinara sauce evenly across the crust.
Layer the fried chicken cutlets on top of the marinara sauce.
Sprinkle shredded mozzarella cheese generously over the chicken, followed by grated Parmesan cheese.
Place the assembled pizza in the preheated oven. Bake for 15-20 minutes or until the cheese is melted and bubbly, and the crust is golden brown.
Remove from the oven and let it cool slightly. Garnish with fresh basil leaves if desired.
