Chicken Riesling is a flavorful dish that combines tender chicken breasts with a rich wine sauce and sautéed vegetables.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup Riesling wine
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove them from the skillet and set aside.
  4. In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 3-4 minutes.
  5. Pour in the Riesling wine, scraping the bottom of the skillet to release any browned bits. Allow the wine to simmer for about 2 minutes.
  6. Stir in the chicken broth and Dijon mustard, mixing well to combine.
  7. Place the seared chicken breasts back into the skillet, ensuring they are submerged in the sauce.
  8. Reduce the heat to low, cover the skillet, and let simmer for 30 minutes, or until the chicken is cooked through and tender.
  9. Stir in the fresh thyme during the last few minutes of cooking.
  10. Once done, remove from heat and garnish with fresh parsley before serving.
