1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, sliced (any color)
1 cup broccoli florets
1 cup carrots, sliced
1 teaspoon dried Italian herbs (or your favorite seasoning)
Salt and pepper to taste
1 tablespoon soy sauce (optional)
Fresh parsley for garnish (optional)
Instructions
In a large skillet, heat the olive oil over medium heat.
Add the chicken pieces and season with salt, pepper, and Italian herbs. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion becomes translucent.
Stir in the sliced bell pepper and carrots. Cook for another 3-4 minutes until they begin to soften.
Add the broccoli florets to the skillet and continue to cook for an additional 3-4 minutes, stirring occasionally.
Once the vegetables are tender, return the cooked chicken to the skillet. Stir well to combine all the ingredients.
Drizzle the soy sauce over the mixture if using, and stir to coat everything evenly.
Taste and adjust the seasoning with more salt, pepper, or herbs as needed.
Remove from heat, garnish with fresh parsley if desired, and serve hot.
