Chicken Wellington: An Incredible Ultimate Recipe for 5-Star Dining

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup finely chopped mushrooms
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 package (14 oz) puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Flour, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for about 3-4 minutes on each side until golden. Remove and let cool.
  3. In the same skillet, add chopped mushrooms, onion, and garlic. Sauté until the mixture is dry and golden, about 8-10 minutes. Stir in thyme and season with salt and pepper. Remove from heat and let cool.
  4. On a lightly floured surface, roll out the puff pastry into a rectangle, large enough to wrap around the chicken.
  5. Brush the Dijon mustard evenly over the chicken breasts.
  6. Spread the mushroom duxelles mixture over the mustard-coated chicken, covering it completely.
  7. Place the chicken in the center of the pastry. Fold the pastry over the chicken, sealing the edges well. Trim any excess pastry if necessary.
  8. Place the wrapped chicken seam-side down on a baking sheet lined with parchment paper. Brush the top with the beaten egg for a golden finish.
  9. Bake in the preheated oven for 40-45 minutes or until the pastry is golden brown and puffed. An internal temperature of the chicken should reach 165°F (74°C).
  10. Remove from the oven and allow the Chicken Wellington to rest for 10-15 minutes before slicing.
