4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1 cup cream cheese, softened
½ cup ricotta cheese
1 cup cooked quinoa
1 cup dried cranberries
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded mozzarella cheese
Fresh parsley, for garnish
Instructions
Start by preheating your oven to 375°F (190°C).
Prepare the Stuffing: In a large bowl, mix the chopped spinach, cream cheese, ricotta cheese, cooked quinoa, dried cranberries, garlic powder, onion powder, dried thyme, salt, and pepper until well combined.
Prepare the Chicken: Using a sharp knife, carefully cut a pocket into each chicken breast, being cautious not to cut all the way through.
Stuff the Chicken: Generously fill each chicken breast pocket with the stuffing mixture. Use toothpicks to secure the openings if necessary.
