Instructions

  1. Start by preheating your oven to 375°F (190°C).
  2. Prepare the Stuffing: In a large bowl, mix the chopped spinach, cream cheese, ricotta cheese, cooked quinoa, dried cranberries, garlic powder, onion powder, dried thyme, salt, and pepper until well combined.
  3. Prepare the Chicken: Using a sharp knife, carefully cut a pocket into each chicken breast, being cautious not to cut all the way through.
  4. Stuff the Chicken: Generously fill each chicken breast pocket with the stuffing mixture. Use toothpicks to secure the openings if necessary.
