  • 1 pound chicken thighs (boneless, skinless)
  • 2 cups butternut squash (diced)
  • 1 cup Brussels sprouts (halved)
  • 1 cup carrots (sliced)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper (to taste)
  • 1 cup chicken broth
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop all vegetables. Dice the chicken thighs into bite-sized pieces.
  3. In a small bowl, combine thyme, smoked paprika, salt, and pepper. Set aside.
  4. In a large oven-safe pan, heat olive oil over medium-high heat.
  5. Add chicken pieces to the pan and sear until golden brown, about 5-7 minutes.
  6. Stir in the onions, garlic, butternut squash, Brussels sprouts, and carrots. Cook for another 3-5 minutes until slightly softened.
  7. Sprinkle the seasoning mixture over the chicken and vegetables, mixing well.
  8. Pour in the chicken broth, stirring to combine all ingredients.
  9. Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
  10. Once out of the oven, sprinkle with fresh parsley before serving.
