- 1 pound chicken thighs (boneless, skinless)
- 2 cups butternut squash (diced)
- 1 cup Brussels sprouts (halved)
- 1 cup carrots (sliced)
- 1 medium onion (chopped)
- 4 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 tablespoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper (to taste)
- 1 cup chicken broth
- Fresh parsley (for garnish)
- Preheat your oven to 400°F (200°C).
- Wash and chop all vegetables. Dice the chicken thighs into bite-sized pieces.
- In a small bowl, combine thyme, smoked paprika, salt, and pepper. Set aside.
- In a large oven-safe pan, heat olive oil over medium-high heat.
- Add chicken pieces to the pan and sear until golden brown, about 5-7 minutes.
- Stir in the onions, garlic, butternut squash, Brussels sprouts, and carrots. Cook for another 3-5 minutes until slightly softened.
- Sprinkle the seasoning mixture over the chicken and vegetables, mixing well.
- Pour in the chicken broth, stirring to combine all ingredients.
- Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
- Once out of the oven, sprinkle with fresh parsley before serving.
