  • 1 can (14 oz) full-fat coconut milk
  • 2 cups low-sodium chicken broth
  • 2 tsp fresh ginger, grated
  • 3 tbsp red curry paste
  • 2 tbsp lime juice
  • 1 cup carrots, chopped
  • 1 cup bell peppers, chopped
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. Prep your ingredients: Chop the carrots and bell peppers into bite-sized pieces.
  2. Combine ingredients in the crockpot: Place the chicken thighs at the bottom of your crockpot. Add the coconut milk, chicken broth, grated ginger, red curry paste, lime juice, and chopped carrots and bell peppers on top.
  3. Season: Sprinkle salt and pepper over the ingredients. Stir gently to combine everything.
  4. Cook: Cover the crockpot and set it to cook on low heat for 6 hours or on high heat for 3 hours.
  5. Shred the chicken: Once the cooking time is complete, remove the chicken thighs from the crockpot. Shred the chicken using two forks.
