1 pound boneless, skinless chicken breasts, cooked and shredded
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup crispy bacon, crumbled
1 teaspoon ranch seasoning mix
1 bag (32 oz) frozen tater tots
1 cup shredded mozzarella cheese
Salt and pepper to taste
Optional: chopped green onions for garnish
Instructions
Preheat your oven to 400°F (200°C).
If not already done, cook and shred the chicken breasts. Set aside.
In a large mixing bowl, combine the cream of chicken soup, sour cream, ranch seasoning mix, and shredded cheddar cheese. Mix until well combined.
Fold in the shredded chicken and crumbled bacon into the mixture. Season with salt and pepper to taste.
In a greased 9×13 inch baking dish, spread the chicken mixture evenly across the bottom.
Place the frozen tater tots in a single layer over the chicken mixture, covering it completely.
Sprinkle the shredded mozzarella cheese over the tater tots.
Place the casserole in the preheated oven and bake for 30-40 minutes or until the tater tots are golden brown and crispy.
Remove from the oven and let it cool slightly. Optionally, sprinkle with chopped green onions for added flavor.
