8 oz Mushrooms (mix of cremini and button)
1 Onion (finely chopped)
2 cloves Garlic (minced)
4 cups Vegetable Broth (low-sodium)
1 cup Heavy Cream (or coconut milk for dairy-free)
2 tbsp Butter (for sautéing)
1 tsp Thyme (fresh or dried)
to taste Salt & Pepper (for seasoning)
Instructions
Sauté the onions and garlic in a large pot over medium heat until they soften, about 3-4 minutes.
Add the mushrooms and cook for another 5-7 minutes until they are tender and slightly golden brown.
Stir in flour and cook for 1-2 minutes, allowing it to coat the mushrooms.
Pour in the broth gradually while stirring to avoid lumps, then add cream and seasonings. Bring to a gentle simmer and let it bubble away for about 15 minutes.
Blend the soup using an immersion blender until smooth, or carefully transfer it to a blender in batches.
Taste and adjust seasoning with salt and pepper as needed before serving hot.
