- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups heavy cream
- 1 teaspoon sugar

- ¼ teaspoon nutmeg
- ½ cup grated Parmesan cheese
- Fresh parsley, for garnish (optional)
- If using pearl onions, blanch them in boiling water for 2 minutes, then transfer to ice water. Once cooled, peel the skins off.
