4 large onions (yellow or sweet)
1 cup heavy cream
1 cup grated Asiago cheese
½ cup breadcrumbs (preferably panko for extra crunch)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon fresh thyme or 1 teaspoon dried thyme
Instructions
Preheat your oven to 375°F (190°C).
Peel and slice the onions into thick rings. Set aside.
In a large skillet, heat olive oil over medium heat. Add the sliced onions and minced garlic, cooking until they become translucent and slightly caramelized, about 10 minutes.
Add salt, black pepper, and thyme to the onions, stirring well to combine.
Pour in the heavy cream, stirring to blend with the onions. Allow it to simmer for about 2-3 minutes.
Transfer the onion mixture to a greased baking dish, spreading it evenly.
Sprinkle the grated Asiago cheese generously over the top of the onions.
Evenly distribute the breadcrumbs over the cheese layer for a delightful crunch.
Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and bubbly.
Once baked, remove from the oven and let it cool for a few minutes before serving.
Notes
Mix in some cooked, crumbled bacon or diced ham for a heartier dish.
