  • 8 cups chicken broth
  • 1 cup long-grain white rice
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups fresh spinach (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Place chicken breasts in the pot, pouring the chicken broth over them. Bring to a boil.
  4. Once boiling, add the rice, thyme, parsley, salt, and pepper. Reduce heat to low and simmer, covered, for about 15-20 minutes until rice is tender.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Add heavy cream, stirring until well combined. If using, add spinach and cook for another 2-3 minutes until wilted.
  7. Taste the soup and adjust seasoning, if necessary.
  8. Ladle soup into bowls and serve warm with lemon wedges if desired.
