Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  3. In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Stir in the cooled espresso or coffee, mixing until combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  7. Gently fold in the mascarpone cheese until the mixture is smooth and creamy.
  8. Using a cookie scoop or tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
