Crispy Baked Feta and Cherry Tomato Pasta: An Incredible 5-Ingredient Recipe

  • 8 ounces pasta (your choice: spaghetti, penne, or fusilli)
  • 1 block (about 8 ounces) feta cheese
  • 2 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  3. Prepare the Baking Dish: In a baking dish, combine the cherry tomatoes and drizzle with olive oil. Season with salt and pepper.
  4. Add the Feta: Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little more olive oil on top of the feta and season with additional salt and pepper.
  5. Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the tomatoes burst and the feta is golden and crispy.
  6. Combine: Remove the dish from the oven and gently mash the feta and tomatoes together with a fork to create a creamy sauce.
  7. Mix with Pasta: Add the cooked pasta to the baking dish and toss to combine, ensuring the pasta is coated in the creamy feta-tomato mixture.
  8. Serve: Transfer to serving plates and garnish with fresh basil or parsley if desired.
