8 ounces pasta (your choice: spaghetti, penne, or fusilli)
1 block (about 8 ounces) feta cheese
2 cups cherry tomatoes, halved
3 tablespoons olive oil
Salt and pepper, to taste
Fresh basil or parsley, for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Baking Dish: In a baking dish, combine the cherry tomatoes and drizzle with olive oil. Season with salt and pepper.
Add the Feta: Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little more olive oil on top of the feta and season with additional salt and pepper.
Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the tomatoes burst and the feta is golden and crispy.
Combine: Remove the dish from the oven and gently mash the feta and tomatoes together with a fork to create a creamy sauce.
Mix with Pasta: Add the cooked pasta to the baking dish and toss to combine, ensuring the pasta is coated in the creamy feta-tomato mixture.
Serve: Transfer to serving plates and garnish with fresh basil or parsley if desired.
