1 lb Chicken breast, cut into strips (Approximately 450g)
1 cup All-purpose flour
2 Large eggs
1 cup Breadcrumbs
4 cloves Garlic, minced
1 tsp Paprika
1 tsp Salt
1/2 tsp Black pepper
1/2 tsp Cayenne pepper (optional)
Vegetable oil, for frying
1/2 cup Greek yogurt
2 tbsp Mayonnaise
1 tbsp Fresh dill, chopped
1 tbsp Lime juice
Zest of 1 lime
Salt and pepper, to taste
Instructions
In a shallow bowl, combine the flour, paprika, salt, black pepper, and cayenne pepper (if using). In another bowl, beat the eggs. In a third bowl, place the breadcrumbs and mix in the minced garlic.
Dip each chicken strip into the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off, and finally coat it with the garlic breadcrumbs, pressing gently to adhere.
In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot (about 350°F or 175°C).
Carefully add the chicken strips to the hot oil in batches, being careful not to overcrowd the pan. Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.
In a bowl, combine the Greek yogurt, mayonnaise, fresh dill, lime juice, and lime zest. Stir until well mixed.
Add salt and pepper to taste. Adjust lime juice if a tangier flavor is desired.
