  • 2 large potatoes, diced
  • 1 lb (450g) chicken breast, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the diced potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer. Bake for 20-25 minutes or until crispy and golden, turning halfway through.
  4. While the potatoes are baking, heat a skillet over medium heat. Add the cubed chicken and season with salt, pepper, and additional spices if desired. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  5. Stir in the broccoli florets and cook for an additional 3-4 minutes until tender.
  6. Once the potatoes are done, remove them from the oven. In a large bowl, combine the crispy potatoes, cooked chicken, and broccoli.
  7. Gently fold in the halved cherry tomatoes.
  8. Sprinkle the shredded cheese over the top and return the bowl to the oven for 5 minutes, just until the cheese melts.
  9. Remove from the oven and garnish with fresh parsley if desired.
