Ingredients
Scale
1 lb Salmon fillet, skin removed and cut into 1-inch cubes
1/2 cup All-purpose flour
1/2 teaspoon Salt
1/4 teaspoon Black pepper
1/2 teaspoon Garlic powder
1/2 teaspoon Paprika
1 Large egg, beaten
1 cup Panko breadcrumbs
Vegetable oil, for frying (about 1/4 inch in the skillet)
1/2 cup Mayonnaise
1 tablespoon Lemon juice
1 teaspoon Lemon zest
1 teaspoon Dijon mustard
Salt and pepper, to taste
Instructions
Pat the salmon cubes dry with paper towels. This will help them get crispy when fried.
In a shallow bowl, mix together the flour, salt, black pepper, garlic powder, and paprika.
In a second shallow bowl, place the beaten egg.
In a third shallow bowl, add the panko breadcrumbs.
Dredge each salmon cube in the flour mixture, shaking off any excess.
Dip them into the beaten egg, allowing any excess to drip off.
Finally, roll the salmon cubes in the panko breadcrumbs, ensuring they are well-coated.
In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
Once the oil is hot, carefully add the breaded salmon cubes in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side. Remove from the skillet and place on paper towels to drain excess oil.
In a small bowl, combine the mayonnaise, lemon juice, lemon zest, Dijon mustard, salt, and pepper. Mix until well blended to make the zesty lemon dip.
Serve the crispy salmon cubes hot with the zesty lemon dip on the side for dipping. Enjoy!
