Crockpot Hamburger Potato Casserole is a hearty and satisfying dish that combines ground beef, potatoes, and cheese, all cooked in a slow cooker for convenience.

Ingredients

Scale
  • 1 pound ground beef
  • 4 large potatoes, thinly sliced
  • 1 medium onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Optional: 1 cup frozen mixed vegetables (peas, carrots, corn)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
  2. Prepare the Vegetables: Slice the potatoes and chop the onion. If using frozen mixed vegetables, set them aside for later.
  3. Layer the Ingredients: In the crockpot, start with a layer of sliced potatoes. Then, add a layer of chopped onions, followed by half of the browned ground beef.
  4. Add Soup and Seasoning: In a bowl, mix the cream of mushroom soup, milk, garlic powder, salt, black pepper, and Italian seasoning. Pour half of this mixture over the layered ingredients in the crockpot.
  5. Repeat Layers: Add another layer of potatoes, onions, and the remaining ground beef. Pour the rest of the soup mixture on top. If using mixed vegetables, sprinkle them over the top layer.
  6. Top with Cheese: Finally, sprinkle the shredded cheddar cheese evenly over the casserole.
  7. Cover and Cook: Cover the crockpot with the lid. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the potatoes are tender.
  8. Check for Doneness: Ensure the potatoes are cooked through and the cheese is melted and bubbly.
  9. Serve: Once done, carefully serve the casserole hot.
