Crockpot Mississippi Pot Roast is a buttery, tender, and bold slow-cooked beef recipe made with ranch, au jus, and pepperoncini. Easy and flavorful.

Ingredients

  • 2 to 4 pounds chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 8 pepperoncini peppers
  • 1/4 cup pepperoncini juice (optional)
  • 1 stick (1/2 cup) unsalted butter

Instructions

  1. Place the chuck roast at the bottom of the crockpot.
  2. Sprinkle the ranch dressing mix and au jus gravy mix evenly over the roast.
  3. Place the pepperoncini on and around the roast. Add pepperoncini juice if desired.
  4. Place the stick of butter on top of the roast. Do not stir.
  5. Cover and cook on low for 8 hours until the meat is tender and shreddable.
  6. Shred the roast with two forks in the crockpot and stir it into the juices before serving.
