Crockpot Potato Broccoli Cheddar Soup is a creamy, hearty dish made with potatoes, broccoli, and cheddar cheese.

  • 4 cups diced potatoes (about 4 medium potatoes)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 medium onion, diced
  • 3 cups vegetable or chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk (whole or half-and-half for extra creaminess)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Wash and dice the potatoes and onion. If using fresh broccoli, cut it into florets.
  2. In your crockpot, add the diced potatoes, broccoli florets, diced onion, garlic powder, onion powder, salt, and pepper.
  3. Pour in the vegetable or chicken broth, ensuring that the vegetables are fully submerged.
  4. Cover the crockpot with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  5. Once cooked, use a potato masher to gently mash some of the potatoes in the soup.
  6. Stir in the milk and butter, mixing until the butter is melted. Then, add the shredded cheddar cheese, stirring until it’s fully melted and incorporated.
  7. Taste the soup and add additional salt and pepper if needed.
  8. Ladle the soup into bowls and enjoy warm!
