1 cup quinoa (rinsed)
1 diced red bell pepper
1 medium cucumber (diced)
2 grated carrots
3 chopped green onions
1/4 cup fresh cilantro (chopped)
1/4 cup peanuts (roughly chopped)
3 tbsp creamy peanut butter
2 tbsp low-sodium soy sauce
Juice of 1 lime
1 tbsp honey or maple syrup
Instructions
Rinse quinoa under cold water and combine with 2 cups of water in a pot. Bring to a boil, cover, reduce heat, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
While quinoa cooks, chop the bell pepper, cucumber, carrots, green onions, and cilantro in a large mixing bowl.
In a separate bowl, whisk together peanut butter, soy sauce, lime juice, and honey until smooth.
Once quinoa has cooled slightly, add it to the bowl with veggies and pour the dressing over the top.
Toss everything together until well combined. Add chopped peanuts for extra crunch.
