Ingredients
Scale
8 oz cream cheese, softened
1 cup powdered sugar
1 cup white chocolate chips
1/2 cup fresh raspberries, crushed
1 tsp vanilla extract
1/4 cup graham cracker crumbs
Additional white chocolate for coating
Sprinkles or additional graham cracker crumbs for decoration (optional)
Instructions
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Gently fold in the crushed raspberries until they are evenly distributed throughout the cream cheese mixture.
Cover the bowl with plastic wrap and refrigerate the mixture for about 1-2 hours, or until it is firm enough to handle.
Once chilled, use a small cookie scoop or your hands to form the mixture into small balls, about 1 inch in diameter. Roll them until they are smooth and place them on a baking sheet lined with parchment paper.
Melt the additional white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until fully melted and smooth.
Dip each chilled cheesecake ball into the melted white chocolate, ensuring they are fully coated. Use a fork to remove excess chocolate and place them back on the parchment-lined baking sheet.
If desired, sprinkle the tops with graham cracker crumbs or colorful sprinkles before the chocolate sets. Allow the cheesecake balls to chill in the refrigerator for an additional 30 minutes to set the coating.
Notes
For a richer flavor, use high-quality white chocolate.
Ensure the cream cheese is softened for easy mixing.
