Egg & Trout Croissants are a delightful brunch treat that elevate your breakfast experience with fluffy scrambled eggs and rich smoked trout, all nestled within a warm, flaky croissant.

  • 4 fresh croissants
  • 4 large eggs
  • 4 oz skinless smoked trout fillets
  • 2 tbsp butter
  • 2 tbsp chopped fresh chives
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the eggs with salt and pepper. Melt the butter in a skillet over medium heat, pour in the egg mixture, and scramble until fluffy.
  3. Slice the croissants open and place them on the baking sheet. Flake smoked trout onto each half.
