Grilled Peach Salad with Basil Vinaigrette is a refreshing summer dish that combines grilled peaches with mixed greens and a zesty vinaigrette.

Ingredients

  • 4 ripe peaches (halved and pitted)
  • 4 cups mixed greens (arugula, spinach, baby kale)
  • 1 cup fresh basil leaves
  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp raw honey
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat (about 400°F or 200°C).
  2. Lightly brush peach halves with olive oil. Grill cut-side down for 4-5 minutes until grill marks appear.
  3. In a blender, combine basil leaves, olive oil, balsamic vinegar, honey, salt, and pepper; blend until smooth.
  4. In a large bowl, mix the greens; add sliced grilled peaches on top.
  5. Drizzle the basil vinaigrette over the salad just before serving and toss gently.
  6. Serve immediately; garnish with extra basil if desired.
