- 4 ripe peaches (halved and pitted)
- 4 cups mixed greens (arugula, spinach, baby kale)
- 1 cup fresh basil leaves
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 2 tbsp raw honey
- Salt and pepper to taste
- Preheat grill to medium-high heat (about 400°F or 200°C).
- Lightly brush peach halves with olive oil. Grill cut-side down for 4-5 minutes until grill marks appear.
- In a blender, combine basil leaves, olive oil, balsamic vinegar, honey, salt, and pepper; blend until smooth.
