3 tbsp extra virgin olive oil
2 chipotle peppers in adobo sauce (finely chopped)
1 cup heavy cream (or coconut milk for dairy-free)
1 cup shredded sharp cheddar cheese

1 tsp paprika (smoked if desired)
Instructions
Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
Wash and dry sweet potatoes, then slice them thinly without cutting all the way through.
Drizzle olive oil over the sweet potatoes and season with salt, pepper, and paprika; add chopped chipotle peppers.
