  • 12 oz goat cheese
  • 2 cups shredded Gruyère or sharp white cheddar
  • 1 cup sliced almonds, toasted
  • 4 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh thyme
  • 2 tsp lemon zest (optional)
  • 1/4 tsp smoked paprika (optional)
  • Kosher salt and freshly ground black pepper, to taste
  • 2 cups pomegranate arils, drained
  • Crackers, crostini, or veggies for serving

Instructions

  1. In a large bowl, combine softened cream cheese, goat cheese, shredded Gruyère, fresh parsley, fresh thyme, lemon zest, and smoked paprika.
  2. Season generously with kosher salt and freshly ground black pepper. Mix until the ingredients are smooth and well combined.
  3. Cover the bowl and refrigerate the cheese mixture for 20-30 minutes to firm up.
  4. Divide the chilled mixture into one large or two smaller balls. Shape them gently using plastic wrap.
  5. Spread the toasted almonds on a plate. Roll the cheese ball(s) in the almonds, pressing lightly to coat the entire surface.
  6. Re-wrap the cheese ball(s) and chill again for at least 30 minutes to firm up completely.
  7. Just before serving, unwrap the cheese ball and place it on a serving platter.
  8. Gently press the drained pomegranate arils all over the surface of the cheese ball.
  9. Garnish with extra fresh herbs like rosemary or thyme for a festive look.
  10. Serve with your favorite crackers, crostini, or fresh vegetable sticks.
