- 500 grams fresh okra, washed and dried
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped for garnish
- Wash and dry the okra thoroughly. Cut off the tops and tails, then slice them into 1-inch pieces.
- In a large skillet, heat the vegetable oil over medium heat.
- Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the chopped tomatoes and cook until they soften and release their juices.
- Mix in the ginger-garlic paste, turmeric powder, red chili powder, and coriander powder. Cook for about 2 minutes.
- Add the sliced okra to the skillet. Gently stir to coat the okra with the spice mixture.
- Add salt to taste and mix well. Cover the skillet and cook for about 10-12 minutes, stirring occasionally until the okra is tender but not mushy.
- Once the okra is cooked, sprinkle the garam masala over it and gently stir to combine.
- Remove from heat and garnish with freshly chopped coriander leaves.
