Flavorful Indian-Style Okra is a delicious and vibrant dish that showcases the unique flavors of Indian cuisine.

  • 500 grams fresh okra, washed and dried
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • Salt, to taste
  • Fresh coriander leaves, chopped for garnish

Instructions

  1. Wash and dry the okra thoroughly. Cut off the tops and tails, then slice them into 1-inch pieces.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Once the oil is hot, add the cumin seeds and let them sizzle for a few seconds until fragrant.
  4. Add the chopped onions and sauté until they turn golden brown.
  5. Stir in the chopped tomatoes and cook until they soften and release their juices.
  6. Mix in the ginger-garlic paste, turmeric powder, red chili powder, and coriander powder. Cook for about 2 minutes.
  7. Add the sliced okra to the skillet. Gently stir to coat the okra with the spice mixture.
  8. Add salt to taste and mix well. Cover the skillet and cook for about 10-12 minutes, stirring occasionally until the okra is tender but not mushy.
  9. Once the okra is cooked, sprinkle the garam masala over it and gently stir to combine.
  10. Remove from heat and garnish with freshly chopped coriander leaves.

  • Incorporate chickpeas or paneer for added protein, making the dish heartier.
