  • 2 boxes macaroni and cheese, plus milk and butter as per package directions
  • 3 cups shredded Monterey Jack cheese
  • 3 cups shredded sharp Cheddar cheese
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 4 cups all-purpose flour, seasoned with kosher salt and black pepper
  • 4 large eggs + 2 tbsp milk, lightly beaten
  • 4 cups panko bread crumbs
  • Vegetable oil, for frying
  • Finely chopped parsley, for garnish

Instructions

  1. Prepare both boxes of macaroni and cheese according to package directions.
  2. Remove from heat and stir in shredded Monterey Jack, sharp Cheddar, cayenne pepper, garlic powder, and smoked paprika until smooth and melted.
  3. Spread the cheesy mac mixture in a baking dish or bowl. Cool on the counter for 15-20 minutes, then refrigerate for at least 1 hour, or until firm.
  4. Use a cookie scoop or tablespoon to portion the firm mac and cheese mixture. Roll into 1 1/2-inch balls and place on a parchment-lined baking sheet.
  5. Set up three shallow bowls: one with seasoned flour, one with beaten eggs and milk, and one with panko bread crumbs.
  6. Roll each mac and cheese ball first in flour, tapping off excess.
  7. Dip into the egg wash, letting excess drip off.
  8. Roll in panko bread crumbs, pressing gently to coat. Place back on the baking sheet.
  9. For an extra-thick crust, double dip: re-dip in egg wash and then panko.
  10. Optional: Chill the breaded balls for 10-15 minutes to help the coating set.
  11. Pour vegetable oil into a heavy-bottomed pot or Dutch oven to about 3 inches deep. Heat oil to 350°F (175°C).
  12. Carefully lower 4-5 balls at a time into the hot oil using a slotted spoon. Do not crowd the pot.
  13. Fry for 3-4 minutes, turning occasionally, until deep golden brown and crisp.
  14. Transfer fried mac and cheese balls to a plate lined with paper towels to drain excess oil.
  15. Garnish with finely chopped parsley and a pinch of flaky sea salt while hot.
  16. Serve immediately with your favorite dipping sauces.
