1 pound Cod fillets, cut into bite-sized cubes
4 tablespoons Unsalted butter
4 cloves Garlic, minced
1 teaspoon Paprika
to taste Salt
to taste Pepper
1 tablespoon Fresh parsley, chopped (for garnish)
½ cup Mayonnaise
½ cup Sour cream
2 tablespoons Dill pickle relish
1 tablespoon Lemon juice
1 teaspoon Dried dill
1 teaspoon Garlic powder
to taste Salt
to taste Pepper
Instructions
In a medium bowl, combine the mayonnaise, sour cream, dill pickle relish, lemon juice, dried dill, garlic powder, salt, and pepper. Mix well until all ingredients are combined. Adjust seasoning to taste. Refrigerate until ready to serve.
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
Season the cod cubes with paprika, salt, and pepper. Carefully add the cod cubes to the skillet and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
Transfer the cooked garlic butter cod cubes to a serving platter. Garnish with chopped fresh parsley. Serve warm with the tartar ranch on the side for dipping.
