  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)
  • 1 cup jasmine rice
  • 2 cups water
  • Salt, to taste
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, water, and a pinch of salt. Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed. Let sit covered for 5 minutes.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in shrimp, paprika, salt, and pepper. Cook for 2-3 minutes per side until shrimp are pink and opaque. Drizzle with lemon juice and toss to combine. Remove from heat.
  3. In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, dill, parsley, garlic powder, salt, and pepper until smooth. Adjust seasoning.
  4. Fluff cooked rice with a fork and divide among serving bowls. Top with garlic butter shrimp. Drizzle with creamy herb sauce and garnish with fresh parsley.
