Deliciously crispy garlic Parmesan chicken cubes served with a tangy lemon dip, perfect for appetizers or a light meal.

  • 1 lb Chicken breast, cut into cubes (450g)
  • 1/2 cup Grated Parmesan cheese
  • 1/4 cup All-purpose flour
  • 2 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Red pepper flakes (optional)
  • 2 Large eggs, beaten
  • 1/4 cup Breadcrumbs
  • 2 tablespoons Olive oil
  • 1/2 cup Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, combine the grated Parmesan cheese, flour, minced garlic, paprika, salt, black pepper, and red pepper flakes.
  3. In another shallow dish, place the beaten eggs.
  4. In a third shallow dish, place the breadcrumbs.
  5. Dip each chicken cube first into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Ensure each piece is well-coated.
  6. Place the coated chicken cubes on the prepared baking sheet and drizzle with olive oil.
  7. Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and golden brown, flipping halfway through.
  8. For the Lemon Dip, in a small bowl, combine the mayonnaise, lemon juice, lemon zest, and minced garlic.
  9. Mix well and season with salt and pepper to taste. Refrigerate for at least 10 minutes to allow the flavors to meld.
