This Grilled Cheese Pizza recipe combines the comforting gooeyness of a grilled cheese sandwich with the savory flavors of pizza. It’s a quick, easy, and delicious meal perfect for lunch, a snack, or a fun dinner.

Ingredients

Scale
  • 4 slices thick-cut bread (like Texas Toast, sourdough, or Italian)
  • 1 cup shredded low-moisture, whole-milk mozzarella cheese
  • 810 slices pepperoni
  • 1/4 cup pizza sauce
  • 2 tbsp softened butter
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder

Instructions

  1. In a small bowl, mix softened butter with garlic powder and Italian seasoning to create a seasoned butter paste.
  2. Lay out four slices of bread. Spread the seasoned butter generously on one side of each slice. This is the exterior.
  3. Flip the slices over so the unbuttered side faces up.
  4. On two of the slices, sprinkle a light layer of mozzarella cheese.
  5. Add pepperoni slices over the cheese.
  6. Spoon 1-2 tablespoons of pizza sauce over the pepperoni.
  7. Top with the remaining mozzarella cheese.
  8. Place the other two bread slices on top, buttered side out. Gently press down.
  9. Heat a skillet or griddle over medium heat until hot.
  10. Carefully place the sandwiches in the skillet.
  11. Cook for 2-4 minutes until the bottom is golden brown.
  12. Flip the sandwiches and cook the other side for another 2-4 minutes until golden brown and cheese is melted. Reduce heat to medium-low if browning too quickly.
  13. Transfer to a cutting board and let rest for one minute.
  14. Slice diagonally and serve immediately.

Notes

  • Stale bread works well for extra crispiness.
  • Shredding your own mozzarella block generally results in better melting than pre-shredded cheese.
  • Consider using smaller ‘cup and char’ pepperoni for crispier edges and flavor bowls.
  • Mayonnaise can be used instead of butter on the outside of the bread for a different flavor and crispness.
  • Toasting the Italian seasoning in a dry pan before mixing can enhance its flavor.
  • For a faster melt, cover the skillet with a lid for the last minute of cooking.
  • Avoid pressing down on the sandwich constantly while cooking; a gentle press after flipping is sufficient.
  • Letting the sandwich rest for a minute before cutting helps the cheese set.
  • Serve with a side of marinara or pizza sauce for dipping.
  • A simple side salad or crispy fries complement the sandwich well.
