2 cups cooked, shredded grilled chicken
4 large flour tortillas
2 cups shredded cheddar cheese
1 cup diced bell peppers (any color)
1 cup sliced onions
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro, for garnish (optional)
Sour cream and salsa, for serving (optional)
Instructions
In a bowl, mix the shredded grilled chicken with garlic powder, cumin, chili powder, salt, and pepper. Set aside.
In a skillet, heat olive oil over medium heat. Add the diced bell peppers and sliced onions. Sauté until they are tender, about 5-7 minutes.
Lay one tortilla flat on a clean surface. On half of the tortilla, layer a portion of the seasoned chicken, sautéed vegetables, and a generous amount of shredded cheese.
Carefully fold the tortilla in half, covering the filling. Press down gently to seal.
In the same skillet, add the folded quesadilla. Cook for 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.
Remove from the skillet and let cool for a minute. Cut the quesadillas into wedges and garnish with fresh cilantro if desired.
