Grilled Chicken Quesadilla Delight is a flavorful dish made with seasoned chicken, sautéed vegetables, and melted cheese, all folded in a tortilla.

  • 2 cups cooked, shredded grilled chicken
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers (any color)
  • 1 cup sliced onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)
  • Sour cream and salsa, for serving (optional)

Instructions

  1. In a bowl, mix the shredded grilled chicken with garlic powder, cumin, chili powder, salt, and pepper. Set aside.
  2. In a skillet, heat olive oil over medium heat. Add the diced bell peppers and sliced onions. Sauté until they are tender, about 5-7 minutes.
  3. Lay one tortilla flat on a clean surface. On half of the tortilla, layer a portion of the seasoned chicken, sautéed vegetables, and a generous amount of shredded cheese.
  4. Carefully fold the tortilla in half, covering the filling. Press down gently to seal.
  5. In the same skillet, add the folded quesadilla. Cook for 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.
  6. Remove from the skillet and let cool for a minute. Cut the quesadillas into wedges and garnish with fresh cilantro if desired.
