  • 4 cups fresh broccoli florets
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Wash and chop the broccoli; dice the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the onions until translucent (about 5 minutes), then add garlic and cook until fragrant.
  3. Add broccoli and broth to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes until broccoli is tender.
  4. Using an immersion blender, purée the soup until smooth (blend partially if you prefer some texture).
  5. Return the soup to low heat and stir in heavy cream and cheddar cheese until melted.
  6. Adjust seasoning. Serve hot, garnished with extra cheese or fresh herbs if desired.
