  • 1 pound Cod fillets, cut into cubes
  • 1/4 cup Honey
  • 1/4 cup Yellow mustard
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh dill, chopped
  • 1/2 cup Sour cream
  • 1/4 cup Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dried dill weed

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together honey, yellow mustard, olive oil, garlic powder, onion powder, salt, and pepper until well combined.
  2. Marinate the Cod: Place the cod cubes in a large resealable plastic bag or a shallow dish. Pour the marinade over the cod, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes to 1 hour.
  3. Make the Dill Ranch: In a separate bowl, mix together the sour cream, mayonnaise, lemon juice, fresh dill, and dried dill weed. Stir until smooth and well combined. Adjust seasoning with salt and pepper to taste. Refrigerate until ready to serve.
  4. Cook the Cod: Preheat your grill or a skillet over medium-high heat. Remove the cod from the marinade, allowing excess marinade to drip off. Cook the cod cubes for about 3-4 minutes on each side, or until they are cooked through and golden brown.
  5. Serve: Remove the cod from the heat and let it rest for a minute. Serve the honey mustard cod cubes with a generous dollop of dill ranch on the side for dipping.
