Coconut Cheesecake Brownies are a delightful fusion of rich chocolate brownies and creamy coconut cheesecake, offering a tropical escape in every bite.

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 3 large eggs
  • 1/2 cup all-purpose flour
  • 8 oz cream cheese (softened)
  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a square baking dish or line with parchment paper.
  2. In a mixing bowl, combine melted butter, cocoa powder, and sugar until smooth. Add eggs one at a time, mixing well after each addition. Gradually fold in flour until fully incorporated.
  3. In another bowl, beat softened cream cheese until creamy. Mix in sugar and eggs until smooth, then stir in shredded coconut.
  4. Pour half of the brownie batter into the prepared dish. Spoon dollops of the cheesecake mixture on top and gently swirl with a knife before adding the remaining brownie batter.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out with moist crumbs. While still warm, sprinkle chocolate chips on top and let them melt slightly before swirling into the surface.
  6. Allow to cool before cutting into squares.
