Pistachio Cheesecake Brownies are a heavenly dessert that combines rich chocolate brownie layers with a creamy pistachio cheesecake topping.   • 1 cup shelled pistachios
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 8 oz full-fat cream cheese
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a saucepan over low heat, melt the butter and sugar together until combined. Mix in cocoa powder until smooth, then remove from heat.
  3. Allow the mixture to cool slightly before adding eggs one at a time, mixing well after each addition.
  4. Fold in flour and salt until just combined; do not overmix.
  5. In another bowl, beat cream cheese until smooth. Add sugar and vanilla extract; mix well. Fold in half of the chopped pistachios.
  6. Pour half of the brownie batter into the prepared pan, followed by dollops of cheesecake mixture and remaining brownie batter. Swirl gently with a knife.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely before cutting into squares.
