4 large bell peppers (any color)
1 lb lean ground beef
1 cup chopped mushrooms (button or cremini)
1 medium yellow onion, chopped
3 cloves garlic, minced
1 cup sour cream
1 cup beef broth (low-sodium)
1 tbsp Dijon mustard
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
Wash the bell peppers, slice off the tops, and remove seeds/membranes. Set aside.
In a skillet over medium heat, brown the ground beef; drain excess fat. Add onions and garlic; sauté until translucent.
Stir in mushrooms and cook until tender. Pour in beef broth and Dijon mustard; reduce heat and mix in sour cream until creamy.
Generously stuff each pepper with the filling and place upright in the baking dish.
Cover with foil and bake for 30-35 minutes. For a crispy top, uncover during the last 5 minutes.
