  • 4 large bell peppers (any color)
  • 1 lb lean ground beef
  • 1 cup chopped mushrooms (button or cremini)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup beef broth (low-sodium)
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Wash the bell peppers, slice off the tops, and remove seeds/membranes. Set aside.
  3. In a skillet over medium heat, brown the ground beef; drain excess fat. Add onions and garlic; sauté until translucent.
  4. Stir in mushrooms and cook until tender. Pour in beef broth and Dijon mustard; reduce heat and mix in sour cream until creamy.
  5. Generously stuff each pepper with the filling and place upright in the baking dish.
  6. Cover with foil and bake for 30-35 minutes. For a crispy top, uncover during the last 5 minutes.
