  • 6 ripe tomatoes (about 1.5 lbs), chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 slices sharp cheddar cheese
  • 4 slices sourdough or whole grain bread

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until translucent (about 5 minutes).
  2. Add chopped tomatoes to the pot and cook for about 10 minutes until softened.
  3. Pour in the vegetable broth, bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream over low heat until warmed through.
  6. For grilled cheese, butter bread slices and assemble with cheddar cheese. Grill in a pan until golden brown on both sides (about 3 minutes each side).
  7. Serve the soup hot with grilled cheese on the side.
