3–4 lbs chuck roast
1 cup low-sodium beef broth
1 packet (1 oz) ranch dressing mix
1 packet (1 oz) au jus mix
4 hoagie rolls or brioche buns
1 cup sliced sweet bell peppers
Instructions
Season the chuck roast with salt and pepper. Place it in a slow cooker.
Sprinkle ranch dressing mix and au jus mix over the roast, then pour in beef broth until it covers half of the meat.
Cover and cook on low for 8 hours until fork-tender.
Shred the meat directly in the pot to absorb juices.
