St. Patrick’s Day Easy Green Chicken Enchiladas are a festive and delicious way to celebrate! Bursting with flavor, these enchiladas feature tender shredded chicken, fresh spinach, and zesty green salsa, all wrapped in soft tortillas and topped with gooey cheese.

  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh spinach, chopped
  • 1 cup green salsa
  • 8 oz cream cheese, softened
  • 2 cups shredded Monterey Jack and cheddar cheese blend
  • ½ cup fresh cilantro, chopped
  • 8 corn tortillas

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Cook chicken in a skillet over medium heat for 6-8 minutes per side until no longer pink. Shred the chicken while warm.
  3. In a bowl, mix shredded chicken, spinach, cream cheese, half of the green salsa, and cilantro until well combined.
  4. Spoon about 2 tablespoons of the filling into each tortilla, roll tightly, and place seam-side down in the prepared baking dish.
  5. Drizzle remaining salsa over the enchiladas and sprinkle with shredded cheese.
  6. Bake for 20 minutes or until bubbly and golden brown.
